The truffle we produce and market is the Black Truffle “Tuber Melanosporum” has a very intense aroma and flavor so it is so valued in haute cuisine also known as black diamond.
Its flavour varies according to the specifications of the soil in which it is found, which is why the Truffle of Sarrión has such a unique character.
The optimum period for harvesting fresh Black Truffle is in winter, from mid-November to mid-March.
