If you wish to consume fresh Black Truffle thanks to our nurseries we can provide it during the fresh truffle season, which starts in mid-November and ends at the end of March, and during the rest of the year we have frozen Black Truffle.
SHIPPING PROCESS
The truffle brushed and in ideal conditions.
It is stored in cotton sacks.
It is transported in porexpan boxes, with the respective cold accumulators, always depending on the kilos and the area to be sent.
It is strapped for subsequent shipment and avoid opening.
TIPS FOR TRUFFLE CONSERVATION:
The truffle must be kept clean. To do this it is necessary to remove the soil from its roughness and clean its impurities gently with a small brush and if necessary, under a thread of water.
Important: Before consuming the Black Truffle we must wash it until the remains of soil are completely eliminated.
It is not recommended to store them outdoors as there is a risk of oxidation with the consequent loss of perfumes and aromas.
It is preferable to store the truffle in a hermetically sealed container or covered with a transparent film. In the base of the container we can put kitchen paper.
Another way of conservation is the unitary freezing of the fresh truffles to be able to consume them during the rest of the year. It should be stored washed, in clear film or in freezer bags.
In order to consume frozen truffle it is not necessary to defrost it, it is enough to grate it on the plate that we are cooking. That way, if we don’t use the whole thing, it can still be frozen.
Store at a refrigeration temperature of between 2 and 5 °C, if possible in the lower part of refrigerators that do not dry out too much.
Another way to keep it in the refrigerator would be to use a porous container, such as basketry or earthenware containers, covered with a damp cloth.
